# Wine storage in a house on the water

> Humidity, glass doors and a floor with some spring in it. What changes about running a wine cabinet in a Jacksonville Beach house, and what does not.

A wine cabinet has an unusual specification: its job is to be uninteresting.
Same temperature this week as last week, same humidity, no light, no vibration.
Wine is far more damaged by swing than by any particular number, so a cabinet
that cycles four degrees twice a day is failing even though it never once ran
warm.

That single fact changes how these units should be diagnosed. A spot reading of
a wine cabinet is close to useless. We log instead, and so should you if you are
trying to work out whether something is wrong.

## Condensation on the glass is a room problem first

Interior condensation on a glass door means the inner pane has dropped below the
dew point of the air in front of it. In a beach house that is not automatically
a fault.

Consider what a spring afternoon looks like here: sliders open, the sea breeze
through the house, indoor humidity running high for hours. A cabinet on an
exterior wall in that airflow will fog a door while working exactly to
specification. The identical cabinet in an interior butler's pantry twenty feet
away will not.

So we check the room before we condemn the door. Where the cabinet sits, ambient
humidity measured at the cabinet face, and whether it is in line with an opening
to the outside. Sometimes the answer is a gasket. Often it is placement, or a
habit.

If the seal genuinely has lost its set, or the hinge has taken enough corrosion
to sit a fraction out of plane, then hardware gets replaced. Hinge corrosion is
common on this island and worth checking once a year on anything with a heavy
glass or panelled door.

## Humidity is half the specification

Wine storage is specified around a moderate relative humidity: enough that corks
do not dry and shrink, not so much that labels foul or mould appears under a
shelf. A cabinet cooling perfectly but running dry will show it in the corks
long before it shows anywhere else, and for a collection kept over years that
matters more than the last degree of accuracy.

The frequent misdiagnosis is treating a dry cabinet as a refrigeration fault. It
usually is not. Excess air exchange — a door opened constantly, a gasket
breathing, a cabinet in a room under aggressive air conditioning — carries
moisture out faster than the cabinet can return it. It is an airflow problem
presenting as a humidity symptom, and no amount of compressor work fixes it.

## The floor, and vibration

Compressor vibration transmitted into racking is a real issue for bottles kept
for years. On the beaches there is a second source people overlook.

Plenty of older beach cottages here have floors with some spring in them, and a
cabinet that is not sitting dead level runs its compressor mount harder on one
side and passes more of that energy into the frame. Levelling is a two-minute
check and we do it on every visit, because it is a genuinely free improvement on
a cabinet that will be running for another decade.

## Where these cabinets end up, and what that costs them

Wine storage rarely lives in the kitchen. It goes in a bar, a butler's pantry, a
converted closet, sometimes a garage. Those spaces get less air movement, less
attention and, in a garage, no conditioning at all.

Two consequences follow. Ambient temperature at the cabinet is often much higher
than the owner assumes, which makes the machine work harder for the same result.
And salt-laden air that gets into the house settles in the still corners, so the
first corrosion we find on these units is on shelf rails and fasteners rather
than anywhere dramatic. Rust bloom on a rail is an early warning about the coil
you cannot see.

## What to watch for

A zone that is creeping toward its neighbour. A compressor cycling noticeably
more often than last year. Corks that look dry when you pull a bottle. Fog on
the inside of the glass at times of day when the house is open. Rust at a shelf
rail.

None of those is an emergency, and all of them are cheaper to address in
September than in the middle of a July heat run.
